The Kentucky Housewife was the first Kentucky cookbook and is the only one considered in this chapter, as the next one was not published until 1875. It contains strategies for hearth cooking and home food processing for larger, well-off (if not wealthy) households before the emancipation of enslaved people. The Kentucky Housewife is one of three “housewife” cookbooks that are regarded as the foundation for classic southern cuisine.
